So on Friday night, we decided to go to Blues Pub, where happy hour is from 5-6pm. The result was being ridiculously intoxicated by 6:30pm, and what does one do when you are this drunk at dinnertime? Bake something for your sorority sisters (like omg obviously!).
So after a very eventful grocery shopping trip, where we tried our hardest to avoid a Snooki-like situation leaving us in the drunk tank, we made the best brownies ever. Please behold Raspberry Cheesecake Brownies:
Right, so wipe the drool off your face and let's get started. This recipe was (drunkenly) adapted from http://rebekahsfamilyfoodandfun.blogspot.com/ so some steps are left out, but ours turned out just fine anyways.
Ingredients:
1 cup margarine
2 cups sugar, divided
5 eggs, divided use
1 cup semi-sweet chocolate chips
1 cup flour
1/4 tsp. salt
2 tsp. vanilla extract, divided use
2 250 gram packages of light cream cheese, room temperature* (make sure of this!)
3/4 cup fresh or frozen raspberries
Directions:
Make the cheesecake part first! Seriously, if you are going to try making cheesecake while there is a bowl of brownie batter staring at you think again. It doesn't work, our brownies were three parts cheesecake, one part brownie, not exactly "brownies".
1. Preheat oven to 350 degrees F. Butter a 13" x 9" glass baking dish.
For the cheesecake batter:
2. Cream the cream cheese, 2 eggs, 1 cup of sugar, and 1 tsp. of vanilla until it is smooth and creamy.
For the brownie batter:
3. Beat the softened butter with 1 cup of sugar until it's fluffy. Add the 3 eggs, one at a time, beating after each addition.
4. Melt chocolate in a double boiler. Stir into the butter and sugar mixture.
5. Add the flour, salt, and 1 tsp. of vanilla, mix well.
Putting it all together:
5. Spread the chocolate mix on the bottom of your baking tray. Pour the cheesecake mixture on top and spread it evenly. Sprinkle on as many raspberries as you want!
6. Bake for 40 to 45 min or until the cheesecake has lightly browned on the edges.
Here it says "Let the brownies cool off completely, then refrigerate several hours, preferably overnight, before cutting them in squares." HAHAHAHA! You make these babies and aren't supposed to eat them for a few hours? That's a bit of a joke. These were supposed to be for our sorority sleepover so we only tried a few.
We woke up the next morning to find this left. They were just too irresistible. Regardless, our sisters loved them, and it was a very successful evening of baking followed by an equally enjoyable night of dancing.
