For this Eat Your Feelings Day we wanted to make something epic. So we made chocolate chip cookies with chocolate bars inside. We also made chocolate chip cookie dough dip. As you can see chocolate is a necessary part of Eat Your Feelings Day.
Mmmm, you can see the caramel oozing out of them. So get out your heart-shaped measuring cups and let's get started. This recipe was adapted from http://picky-palate.com/ and we also recommend that you use this cookie dough recipe instead of your own because it is a lot less sweet which is needed for cookies stuffed with chocolate.
Ingredients:
1 cup margarine
1 cup granulated sugar
3/4 cup brown sugar
2 eggs
1 tbsp. vanilla
3 1/2 cups flour
1 tsp. baking soda
1/2 tsp. salt
10 oz. bag of chocolate chips
Chocolate bars, cut into small pieces (We used Reese's Bites, Snickers, Twix)
Directions:
1. Preheat oven to 350 degrees F.
2. Cream butter and sugars until well combined. Add eggs and vanilla, mix well.
3. Place flour, baking soda and salt in large bowl, mix slowly. Then add wet ingredients. Add chocolate chips. The mix may be a bit dry, we added milk a teaspoon at a time until we had a dough we could work with.
4. Take two pieces of dough and cover the chocolate bar piece. Roll into a large ball. Try to make sure that none of the chocolate bar is sticking out or it will melt and make a mess.
5. Place onto a parchment lined baking sheet. Bake 9-13 min.
We also made Chocolate Chip Cookie Dough Dip, adapted from http://www.howsweeteats.com/ .
Ingredients:
1/2 cup butter
1/3 cup brown sugar
1 8 oz block of cream cheese, softened
1/2 cup icing sugar
1 tsp. vanilla extract
3/4 cup chocolate chips
Directions:
1. Melt butter in a small saucepan over medium heat. Add brown sugar and whisk until sugar dissolves and mixture starts to bubble. Remove from heat and whisk in vanilla.
2. Cream together cream cheese and icing sugar. Add in brown sugar and butter mixture. Mix until combined.
3. Wait until mixture has completely cooled then add the chocolate chips, otherwise you will get chocolate cookie dip like we had.
Serve with fruit, cookies, crackers or pretzels.
This was our spread on Eat Your Feeling Day, well most of it, if you can believe it more food came after this picture was taken. Festivities included Cosmo readings, a screening of He's Just Not That Into You, and emotional exchanges of conversation hearts.
