Homemade Pad Thai

So every now and then Caitlin and I get super motivated to make something really different and fun. A few weeks ago, we decided to make homemade Pad Thai! The recipe has a few different ingredients, but most are easy to find. If you live in Montreal head to Eden and you can find anything you need there. Even the Tamarind paste, which you would probably expect would be with the 5 million Thai sauces they have, but no, its on a random shelf by itself (just ask someone there).

Also this recipe should be called Dirty Pad Thai, because making it results in some random sexual innuendo. I'm just going to leave it at that, but you have been warned.

Ingredients
1 pkg. thick rice noodles (we made enough to feed four hungry people)
1 pkg. firm tofu
2 tbsp. cornstarch
1/2 tsp. pepper
1/2 tsp. salt
1 tsp. cayenne pepper
4 tbsp. vegetable oil
2 eggs
2 fresh chillies, minced
3 tbsp. tamarind paste
3 tbsp. brown sugar
4 tbsp. soy sauce
5 tbsp. lime juice
2 tbsp. water
1/3 cup chopped roasted unsalted peanuts
1 cup fresh snow peas
2 cups bean sprouts
4 green onions, chopped

As you can see there are a lot of ingredients, these are only some of them: 


Directions
1. Prepare the noodles following the packet instructions. Rinse thoroughly in a colander under cold water, set aside.
2. In a bowl, combine the cornstarch, pepper, salt and cayenne pepper. Add tofu with a small squeeze of lime juice, tossing coat the tofu evenly in the cornstarch mixture.
3. Heat about 2 tablespoons of vegetable oil in a non-stick frying pan, fry the tofu over a medium/high heat. Cook until the tofu is golden on all sides, remove from the frying pan and set aside on some paper towel.
4. Whisk the two eggs and fry in the hot frying pan with a little oil for until just cooked. Remove from the frying pan and set aside.
5. Heat another 2 tablespoons of oil in a large wok over medium heat. Add the minced chillies, leaves, tamarind paste, brown sugar and soy sauce.
6. Raise heat to medium/high and add the prepared noodles with the lime juice and 2 tablespoons of water. Add the prepared tofu, eggs, peanuts, snow peas, bean sprouts and green onions. Toss well for about 10 minutes until heated through.
7. Remove from heat and serve immediately topped with extra peanuts and with wedges of lime on the side.

I recommend eating the peanuts as an appetizer because this takes a long time to make. Oh and get some friends to help, promise to pay them with fresh pad thai.
