Sugar Cookies!

Over the break I spent half my time in the kitchen, I figured with all this free time I can actually do one of my favourite things. Now I have so many recipes to post but so little time because of my mountain of essays. Perhaps I should have spent less time baking and cooking and more time writing...

So to start off I will begin with something we all know and love: Sugar Cookies!
Ah! I get excited just looking at them!!!

The recipe for the cookies I got from our One Smart Cookie book, which is supposed to be healthy cookies but I am suspicious that they just took recipes and halved them and so now people look at the recipe and go hey it only has half a cup of sugar! Lies, cookies are never "smart", just eat them and go to the gym after (seriously, you should, these cookies are addictive, my friend described them "like eating chips").

Ingredients:
1/4 cup margarine
1 tbsp. canola oil
3/4 cup sugar
Dash of lemon juice or lemon zest
1 large egg
1 tsp. vanilla
1 2/3 cups all purpose flour
1 tsp. baking powder
1/4 tsp. salt

Directions:
1. In a large bowl, beat the margarine, oil, sugar and lemon juice until well combined. Add the egg and vanilla and beat until smooth.
2. In a medium bowl mix flour, baking powder and salt. Add to the sugar mixture. Use your hands to knead into dough. If it is too dry add milk a teaspoon at a time.
3. Roll dough into a ball, wrap in plastic and refrigerate for an hour or until chilled. 
4. Preheat oven to 350 degrees Farhenheit. Spread flour on a clean surface and roll out dough using a floured roller. If, like us you don't have a roller, use a round-shaped drinking glass, works perfectly! Cut cookies into whatever shapes you like, hopefully you have Ikea's weird ameba shapes, cause making ameba cookies is always fun.

5. Place the cookies on a greased cookie sheet and bake until lightly golden. This will depend on the size of your cookies, for us it took about 5 min, the recipe says 10-12 min. 

Let your cookies cool and get ready for the best part! The best way to make sugar cookie icing is my way, seriously it is so easy and tastes so good. Combine icing sugar and milk until desired consistency is reached. Add a dash of vanilla and whatever food colouring you wish.
Add whatever sprinkles you like and get creative!

Try to save some for your roommates, it's hard, but try.
