We decided it would be even more fun to make it marble :)
Basic Yellow Cake:
2 cups cake flour
2 tsp baking powder
1/2 tsp salt
1/2 cup butter, softened
1 cup sugar
3 eggs
2 tsp vanilla
3/4 cup milk
Preheat the oven to 350 F and grease and flour a 9x13 cake pan, or two smaller equivalents. Mix wet and dry separately and then fold one into the other, avoiding over-mixing. Separate batter into as many bowls as you like, depending on how many different colors you desire to incorporate in your cake (we did 4), and get creative with some food coloring! Mix colored mixtures into cake pan(s) one by one, and then take a knife and marble the batter until desired effect is achieved.
Bake cake for 30 minutes in a 9x13, or between 20-25 in smaller pans.
Extremely Basic Icing (from memory, but inspired by the recipes on the back of Roger's icing sugar):
1/2 cup butter or margarine (softened)
2 cups icing sugar
2 tbsp milk
a bit more icing sugar and/or milk if necessary
Cream icing sugar with butter and gradually stir in milk. Add more icing sugar to make thicker frosting, or milk to make it thinner. Add some food coloring if desired, and spread on fully cooled cake.
SO FUN! And just in time for St. Patty's Day, which is totally a worthy occasion for a rainbow cake.
