Post-midterm Blondies

Caitlin fucked up this week. It's actually pretty embarrassing. She bought the completely WRONG book for a poli-sci class and had to walk of shame it to the bookstore and get the right one, just four days before the midterm!

Needless to say, it was a stressful week. And how does one unwind from such a week? Blondies, definitely blondies.

And fairly healthy blondies we might add, cause bananas are good for you (and sugar doesn't count when you're taking sucky midterms)
4 tbsp butter or margarine, softened
1 cup brown sugar
1 egg
1 tsp vanilla
2 ripe bananas (medium-sized-ish)
1 cup whole wheat flour
pinch of salt
1 cup chocolate chips (optional. could easily substitute for nuts.)

Pre-heat oven to 350 degrees F, and grease an 8x8 pan. Mix everything in. Put in pan. Put pan in oven. Take pan out of oven in 20 minutes and breathe. Midterm over. Blondies in stomach. All is well.
