Once upon a time, Caitlin got SUPER bored with her carrot sticks and hummus plus like 5 pieces of fruit lunch, so she decided to make the most epic sandwich ever. And we decided to put it online.
English Muffin Tuna Sandwich!
So gorgeous, so healthy, exactly what one needs to get through 7 hours of class (Bad Tuesday/Thursday schedule...).
1 Whole wheat english muffin
1 small can Spicy Thai Chili tuna
A handful of mixed baby greens
3 slices of tomato
desired squirt of honey dijon mustard
a little bit of margarine for each piece of the english muffin
Slap all ingredients on english muffin and wrap in wax paper for yo' lunchbox.
